Pineapple brings the sweetness and acidity, jalapeño adds a fresh, almost herbaceous chilli flavour, and cardamom sits quietly in the background to give the whole thing a little extra depth. It’s bright, punchy and ridiculously easy to use.
Get it on your nachos. Drizzle it over tacos. Spoon it onto crispy potatoes, grilled chicken or fish, or stir it through a bit of yoghurt for a quick sauce. It also works brilliantly with tuna salad, smoked salmon and buttery cabbage.
